Ed,Seguine founded SEGUINE CACACO COCOA & CHOCOLATE ADVISORS in November, 2013, in answer to a critical unmet need for advice throughout the cocoa growing community and within the blossoming artisan chocolate making community. The ability to maximize the flavor potential from a given bean requires extensive tailoring from tree selection through harvest and post harvest processing (fermentation and drying) and then tailoring the roasting and further processing so that the bean can "be all that it can be". Seguine brings to Seguine Cacao Cocoa & Chocolate Advisors over 30 years of extensive experience in origin and working with farmers, coops, research groups and companies in developing cacao.
